What does a Sustainability Officer do?
I need to know for a debate what a sustainability officer does, how it is useful for saving energy and why an Energy Advisor might be more useful to employ.

That would depend on the sector they work in. For example, if they work in the Housing Sector they may be involved in ensuring that the organisation can sustain the housing stock to an acceptable/decent condition. This would also include the energy aspects so, in my scenario, the housing organisation might need the expertise of an Energy Adviser to fill the lack of expertise of surveyors. Or, alternatively, train surveyors in the energy aspects so that they are qualified to issue Energy Performance (Proficiency) Certificates (not sure of the exact name) for properties. EPC are to be required by law (in the UK) any time soon - may even have been 1st Oct - but not sure..
