What are ways to produce ’seasonal vegetables/fruit’ in the off-seasons?

I’m doing a report for school on sustainability and need some ways to produce seasonal fruits/vegetables in the off-seasons instead of importing them
Thanks :)
For some crops it is enough to use row covers while others need the protection of insulated cold frames set to trap solar heat. The most energy expensive local option would be heated green houses or hydroponics for very cold sensitive crops. None of these are good for anything except small crops.
