What should I observe on a plant in a water quality experiment?

I am doing a water quality experiment in my AP Environmental Science class. My group is observing a plant in different water qualities. We’re not sure what to observe on the plant. We know surface area, but this could be difficult and daunting. Thanks for any help!

Not as much as it should be. As a side note, most water in these areas is wasted on lawns and car washing (at home car washing).
